Ingredients

- 2 medium Sweet Potatoes
- ½ Onion, shopped
- ½ Red Pepper, chopped
- 2 Eggs
- 2 cans Tuna in water
- ½ Courgette, grated/li>
- 1 tsp of Sea Salt/li>
- 1 tbsp Coconut Oil/li>
- A Handful of Fresh Parsley, chopped/li>

- Peel and cut potatoes in pieces and steam in a steamer for few minutes, until fork tender. Once tender mash the flesh in a large bowl.
- Pre-heat the oven to 200c (gas mark 6)
- While the sweet potato cools down, heat oil in a pan and sauté onion, until soft, adding red pepper and courgette, and fry for a couple of minutes
- Mix the cooked vegetables to the potato and add tuna, eggs, salt and pepper and fresh parsley
- Combine all ingredients until mixed together
- Line a baking tray with parchment paper, shape mixture into 8 equal sized patties, place them on the tray and bake in the oven for approximately 35 minutes or until golden brown and firm to the touch
- Serve with a mixed salad of your choice and a dipping sauce
