SWEET POTATO & TUNA BURGERS

Easy to make, healthy and packed with taste and nutrients. Can be eaten with a wholegrain bun or on their own with a side salad

Ingredients

  • COOK TIME: 45 minutes
  • CALORIES: 129 Kcals
  • SERVES: 8 Burgers
  • 2 medium Sweet Potatoes
  • ½ Onion, shopped
  • ½ Red Pepper, chopped
  • 2 Eggs
  • 2 cans Tuna in water
  • ½ Courgette, grated/li>
  • 1 tsp of Sea Salt/li>
  • 1 tbsp Coconut Oil/li>
  • A Handful of Fresh Parsley, chopped/li>

steps

  • Peel and cut potatoes in pieces and steam in a steamer for few minutes, until fork tender. Once tender mash the flesh in a large bowl.
  • Pre-heat the oven to 200c (gas mark 6)
  • While the sweet potato cools down, heat oil in a pan and sauté onion, until soft, adding red pepper and courgette, and fry for a couple of minutes
  • Mix the cooked vegetables to the potato and add tuna, eggs, salt and pepper and fresh parsley
  • Combine all ingredients until mixed together
  • Line a baking tray with parchment paper, shape mixture into 8 equal sized patties, place them on the tray and bake in the oven for approximately 35 minutes or until golden brown and firm to the touch
  • Serve with a mixed salad of your choice and a dipping sauce
